How to make the best chicken salad ever

 I didn’t start doing this blog as a food editor!  I swear I didn’t.  I made the mistake, though, of posting a recipe for chili. Then I got a request for more recipes and I posted another for scalloped tomatoes. Then I got several more requests for more recipes. You see where this is leading?
     You won’t see recipes on here that you can get on the Internet. You can always go there and get dozens of recipes for the same dish. I will try to be original.
     There is a super-fine bakery in Lexington named Sweet Magnolia. They also make the best chicken salad I ever ate. I worked at duplicating it and finally came up with something pretty darned close to it. The owner actually gave me a little hint when I told her what I was doing. She told me to add two tablespoons of ordinary white vinegar to the dressing. It’s the touch it needed.
     Try this.  I think you’ll like it.

4 cups boiled chicken breast, cooled and diced
1 1/2 cups celery, finely diced
1 1/2 cups red grapes, halved
1/2 cup chopped pecans
1 1/2 cups real mayonnaise (not Miracle Whip)
1/3 cup honey
2 Tbsp. white vinegar
1/2 tsp. salt
1/4 tsp. pepper

Combine first four ingredients.
Combine the remainder of the ingredients and pour over the first mixture.  Mix well and chill.
